“Hell steaming” is a cooking method unique to hot springs areas, and you can experience it here at Hell Steaming Workshop KANNAWA.

Hell steaming cuisine utilizes the high-temperature steam emanating from hot springs, and is a traditional cooking method that is said to have been used in Beppu since Japan’s Edo Period (1603-1868). The ingredients are placed in a colander, inserted into a steaming kettle called a “hell steam pot” from which steam emanates, and then covered with the lid. The salty steam is approx. 100°C, and steams the food all at once, thus concentrating the ingredients’ natural flavors and making them even more delicious. Hell Steaming Workshop KANNAWA provides all of the cooking utensils, so you can enjoy hell steaming cuisine even if you come empty-handed.

Choose the ingredients you want from a wide selection of menu items, including meat, seafood, eggs, “Hell Yaseuma noodles” (a local Oita delicacy), pork buns, rice in bamboo leaves, and pancakes. The steamed ingredients can be eaten right there on the spot, and not only can you use ponzu sauce and salt for free, but you can also choose from a variety of dressings and sauces to enjoy hell steaming cuisine with your favorite seasoning.

Inside the facilities there is a yureidaki waterfall monument for cooling the water from the onsen hot spring, and an inyuba where you can try drinking some of the onsen hot spring water. There is also an exhibition corner, where you can learn about the area’s history and information. With all of these amenities, Hell Steaming Workshop KANNAWA really lets you experience the various aspects of the hot spring, including the taste.
